  • 4 Gold Potatoes (Diced into Bite-Sized Pieces)

  • 5 Carrots (Diced into Bite-Sized Pieces)


  1. The roast should be washed and dried first before cooking. After that, put it in a bowl big enough to hold it.

  2. Apply the olive oil and add the garlic. Stir thoroughly to spread the garlic evenly.

  3. Next, pour the beer over it after applying olive oil. Spend an hour letting it marinade. More flavor can be achieved by marinating for a more extended period of time.

  4. The oven temperature is set to 320 degrees Fahrenheit. Create four slits in the meat and place a peppercorn into each one. After that, rub some oregano, parsley, salt, thyme leaves, and chili powder on the meat.

  • 1/4 cup brown sugar

  • 1 garlic (chopped)

  • Smoked paprika

  • Kosher salt

  2. Include brown sugar, paprika, kosher salt, black pepper, and garlic powder. For the dry rub, thoroughly mix them.

Method 3:  Crock Pot Recipe

Pikes Peak roasts are ideal pieces for crock pot cooking. The meat cooks thoroughly when using the slow-cooking method. The liquids, along with the other ingredients in the crockpot, form a delicious gravy.


  • 1 lb. chuck roast cut

  • One can of diced tomatoes

  • Two tablespoons of cornstarch

  • Pikes Peak Butcher’s Rub spice, two tablespoons

  • Salt for seasoning

  • 1 Large Onion (Cut into Large Chunks)

  • 5 Carrots (Diced into Bite-Sized Pieces)


  1. The tomatoes and cornstarch should be thoroughly combined in the bowl of the slow cooker.

  2. The roast should be placed on top of the onions and carrots once they have been added. Season the roast well using Pikes Peak Butcher’s seasoning and a pinch of salt.

  3. Cook until soft when forked into, about 5 to 6 hours on high or 10 hours on low. The roast should be moved to a cutting board and rested for 10 minutes before slicing.

  4. To taste, season the leftover veggies and liquid with salt and pepper. Onions, carrots, and sauce should be served on the side with the roast.

Storing Pikes Peak Roast
